Saturday is my baking day - this is my opportunity to bake the things I like to have over the holidays - but don’t want to leave until our fun holiday times to bake.
I am scrapbooking all day so I picked a simple recipe that freezes well and is pretty quick to make after dinner. My daughter actually loves this recipe so I do most of the stove work and then she spoons the mixture onto wax paper and when cooled we pack and freeze. Easy!

Butter Scotch Quickies
Ingredients
- 2 pkgs butterscotch Chipits
- ½ cup peanut butter
- 2 cups cornflakes
- 1 cup medium coconut (unsweetened)
Combine butterscotch and peanut butter and melt over medium heat. Add coconut and cornflakes and mix well. Spoon onto wax paper by teaspoon.
Let set. This recipe freezes well!
